Irresistible Apricot Almond Biscotti

Mastering Homemade Apricot Almond Biscotti: A Deliciously Simple Recipe

While holidays often inspire classic patriotic dishes, sometimes a craving for something truly special takes over. This past weekend, my heart (and stomach!) was set on biscotti. And though a batch of brownies didn’t quite hit the mark, this delightful Apricot Almond Biscotti recipe exceeded all expectations. The combination of sweet, chewy dried apricots and the nutty crunch of almonds creates an Italian cookie that’s simply irresistible – perfect for dipping into your morning coffee or a soothing evening tea.

Freshly Baked Apricot Almond Biscotti

The texture of these cookies is truly noteworthy – wonderfully crisp with a beautifully browned crust, a hallmark of perfectly baked biscotti. The dried apricots soften slightly during baking, releasing their sweet, tangy flavor, which pairs magnificently with the robust taste of roasted almonds. I’m already envisioning future variations, perhaps swapping the apricots for dried cranberries for a festive twist during the holidays. But for now, this Apricot Almond Biscotti stands out as a new favorite.

The Charm of Apricot Almond Biscotti: A Timeless Treat

Biscotti, Italian for “twice-baked,” are renowned for their dry, crunchy texture, which makes them ideal for dunking into beverages. This particular recipe elevates the classic by incorporating the delightful chewiness of dried apricots and the distinct, buttery flavor of almonds. The contrast between the crisp cookie and the soft fruit pieces, along with the added crunch from the nuts, creates a symphony of textures that’s hard to resist. Beyond their fantastic taste, biscotti are also wonderfully versatile, serving as an elegant dessert, a comforting snack, or a thoughtful homemade gift.

Why This Recipe Stands Out

  • Simplicity: Despite their sophisticated appearance, biscotti are surprisingly easy to make. This recipe uses straightforward steps, making it accessible even for novice bakers.
  • Perfect Texture: The double-baking process ensures a uniformly crisp cookie that holds its shape beautifully and is perfect for dipping without crumbling.
  • Flavor Harmony: Apricots and almonds are a classic pairing, offering a balance of sweetness, tartness, and nutty depth.
  • Customizable: While delicious as is, this recipe is a fantastic base for experimentation. Feel free to swap out the dried fruits or nuts to suit your preference.

A Brief History of Biscotti: An Italian Staple

Biscotti’s origins trace back to Roman times, where they were made for travelers and soldiers due to their long shelf life. The twice-baked method removes moisture, preventing spoilage and making them an ideal portable food. Re-emerging in Tuscany during the Renaissance, particularly in the city of Prato, biscotti became popular as a sweet treat, often enjoyed with Vin Santo, a sweet dessert wine. Over centuries, various regions of Italy developed their own versions, incorporating local ingredients. Today, biscotti are beloved worldwide, cherished for their unique texture and adaptability to various flavors, from traditional almond to more modern chocolate and fruit combinations.

Ingredients

  • cup dried apricots
  • 2 large eggs
  • cup brown sugar
  • cup granulated sugar
  • cup canola or any vegetable oil
  • ½ teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 cups plus 2 tablespoons well-stirred and aerated all-purpose flour 9.5 oz**
  • ½ cup roasted almonds chopped
  • cup white chocolate chips optional

Instructions

  • Preheat oven to 375 degrees F. Line a large (12×17 inch) rimmed baking sheet with parchment paper.
  • Chop the apricots into small pieces and set aside.
  • In a large mixing bowl, vigorously whisk the eggs until foamy. Add brown and granulated sugar and whisk for about 30 seconds, then whisk in the oil and both extracts. Whisk in the salt and baking powder, making sure they don’t clump. With a large spoon or heavy duty scraper, stir in the flour until a sticky dough forms. Stir in the apricots and almonds (and white chips, if using).
  • Empty the dough onto the parchment lined baking sheet. With damp hands, form dough into two 8×3 ½ inch rectangles about ½ inch thick. They should be side-by-side on the baking sheet, but space them about 5 inches apart so they’ll have room to spread.
  • Bake on center rack for 25 minutes. Cool rectangles on baking sheet on a rack 10 minutes. Loosen rectangle from baking sheet with a metal spatula and carefully transfer to a cutting board.
  • Reduce oven heat to 325 degrees F.
  • Slice rectangles with a non-serrated knife spacing about a half inch between each cut. You should get about 13 pieces per rectangle.
  • Arrange biscotti, cut side down, on baking sheet and bake 10 minutes on each side, or until pale golden. Transfer biscotti to rack and cool.

Notes

**If you weigh your flour, you don’t have to worry about stirring and aerating before measuring. This ensures accuracy and consistency in your biscotti dough.

Tips for Baking the Best Apricot Almond Biscotti

Achieving that signature biscotti crunch requires a few key techniques. Here are some tips to ensure your Apricot Almond Biscotti turn out perfectly every time:

  • Don’t Overmix the Dough: Once the flour is added, mix just until combined. Overmixing can develop the gluten too much, leading to tough biscotti instead of crisp ones.
  • Damp Hands for Shaping: The dough will be sticky, which is normal. Lightly dampen your hands with water before shaping the logs. This prevents the dough from sticking to your hands and allows for smooth, even rectangles.
  • Even Thickness is Key: Try to form the logs into uniform 8×3 ½ inch rectangles with a consistent ½ inch thickness. This ensures even baking and allows for easier slicing later.
  • Space Them Out: Give your dough logs enough room to spread on the baking sheet during the first bake. About 5 inches apart is ideal to prevent them from merging.
  • Cool Before Slicing: Cooling the baked logs for 10 minutes on the baking sheet allows them to firm up slightly. This makes them much easier to transfer to a cutting board and slice without crumbling.
  • Sharp, Non-Serrated Knife: Use a sharp, non-serrated knife for slicing. A serrated knife can tear the warm biscotti. A clean, decisive cut will give you beautiful, smooth edges.
  • The Second Bake is Crucial: This is where the magic happens! Baking the slices on each side is what gives biscotti their characteristic crispness. Don’t rush this step. They should be pale golden, indicating they’ve dried out sufficiently.
  • Measure Flour by Weight: As mentioned in the recipe notes, measuring flour by weight (9.5 oz) is far more accurate than by volume. This prevents adding too much flour, which can lead to a dry, crumbly dough. If you don’t have a kitchen scale, make sure to aerate and level your flour properly.

Creative Variations to Your Biscotti

While Apricot Almond Biscotti are fantastic on their own, don’t hesitate to get creative with flavor combinations. Here are a few ideas to inspire you:

  • Cranberry Pistachio: Replace dried apricots with dried cranberries and almonds with shelled pistachios for a vibrant, festive look and a different flavor profile.
  • Chocolate Orange: Add orange zest to the dough and swap out some of the apricots for finely chopped candied orange peel. You could also dip the cooled biscotti in melted dark chocolate.
  • Lemon Poppy Seed: Incorporate lemon zest and poppy seeds into the dough for a bright, citrusy twist.
  • Spiced Pecan: Add a pinch of cinnamon or nutmeg along with chopped pecans for a warm, comforting flavor.
  • Double Chocolate: Omit the fruit and nuts, and instead, add cocoa powder to the dry ingredients and lots of chocolate chips (dark, milk, or white) for an indulgent treat.
  • Glaze or Dip: For an extra touch of decadence, drizzle cooled biscotti with a simple powdered sugar glaze, melted chocolate, or even a white chocolate almond drizzle.

Serving Suggestions and Storage

Biscotti are incredibly versatile when it comes to serving. Their firm texture makes them the perfect accompaniment to a variety of beverages:

  • Coffee & Espresso: This is arguably the most classic pairing. The strong, warm flavors of coffee cut through the sweetness of the biscotti beautifully, while the biscotti soften delightfully when dipped.
  • Tea: For a lighter option, enjoy your biscotti with a cup of black tea, herbal infusion, or even a spiced chai latte.
  • Dessert Wine: Channel true Italian tradition by serving biscotti with a sweet dessert wine like Vin Santo. The wine softens the cookies and complements their flavors.
  • Ice Cream Topping: Crumble biscotti over a scoop of vanilla or almond ice cream for an added crunch and burst of flavor.
  • Yogurt or Fruit Parfait: Layer broken biscotti pieces with yogurt and fresh fruit for a gourmet breakfast or a lighter dessert.

Storing Your Homemade Biscotti

One of the best qualities of biscotti is their excellent shelf life. To keep them fresh and crisp:

  • Store completely cooled biscotti in an airtight container at room temperature.
  • They will stay fresh for up to 2-3 weeks.
  • For longer storage, you can freeze baked biscotti for up to 3 months. Thaw at room temperature before serving.
  • Avoid refrigerating biscotti, as the moisture can make them soft.
