Testing Different Cake Mix Brands for the Best Cupcakes

I wasn’t originally planning on trying all three major brands, but since I happened to have a box of each, I decided to put them to the test. I baked cupcakes using a 13.25 oz box of Betty Crocker Butter Recipe, a 15.25 oz box of Duncan Hines, and a 15.25 oz box of Pillsbury. The results were surprisingly consistent!

All three brands worked remarkably well with the enhanced recipe. The Duncan Hines and Pillsbury mixes yielded slightly sweeter cupcakes, which might appeal to those with a sweet tooth. Interestingly, these two brands also produced a larger batch – approximately 32 cupcakes compared to the 24 from the Betty Crocker mix. This is likely due to the slightly larger box size.

Despite the minor differences in sweetness and yield, each brand performed admirably without requiring any adjustments to the recipe. If I had to pick a favorite based on appearance, I’d say the Pillsbury cupcakes had the most appealing rounded tops, which I personally find desirable in cupcakes. However, it’s important to note that the differences were subtle, and you’ll likely be happy with the results regardless of which brand you choose. Use your favorite or what you can find at your local grocery store!

Customize Your Cupcakes: Yellow, White, or Marbled

Since the original inspiration for this recipe came from my enhanced cake mix marble cake, I’ve included instructions for creating chocolate marbled cupcakes in the recipe notes. Adding a marble effect is a simple yet elegant way to elevate your cupcakes. It does require an extra step, but the results are well worth the minimal effort. The combination of vanilla and chocolate flavors is always a crowd-pleaser, and the marbled appearance adds a touch of visual appeal.

Finding the Perfect Cupcake Frosting: Vanilla Buttercream Wins!

The frosting is just as important as the cupcake itself! I experimented with a few different frosting options before settling on the perfect complement. I initially tested my old Cornstarch Frosting recipe, which is interesting but less sweet than traditional frostings. I’m planning to continue playing with the sugar content to fine-tune it.

I also tried making chocolate frosting using the recipe from my Chocolate Butter Cake and even attempted a different version with shortening and butter. However, I wasn’t entirely satisfied with the shortening-based frosting. Ultimately, I decided that good old-fashioned American-style vanilla buttercream was the tastiest and most classic choice for these enhanced cake mix cupcakes.

The resulting cupcakes are perfectly shaped, buttery, and vanilla-y. The texture is slightly more substantial than typical cupcakes, but still wonderfully light and airy. They provide a delicious base for the classic American Buttercream frosting.
