  • In a large mixing bowl, using an electric mixer on medium speed, beat the softened butter and both granulated and light brown sugars until light and creamy, about 2-3 minutes. Beat in the vanilla extract (and optional pistachio or almond extract) and the egg until just combined.
  • Gradually add the reserved flour mixture to the wet ingredients, stirring by hand with a wooden spoon or spatula until thoroughly blended and no dry streaks remain. Be careful not to overmix. Gently stir in the semisweet chocolate chips, dried cherries, and roasted pistachio nuts until evenly distributed.
